Apple & Hemp Seed Muffins | Vegan Restaurant Finder

Hello lovely readers!!!!

Well today’s muffin is basically me trying to get rid of more stuff before I move.  Especially stuff that is in the fridge because it would be 2 days in a moving truck. Don’t think that would go well!

I wanted to get rid of my hemp seeds and you can only make so many smoothies in a day!

I use hemp seeds in most smoothies I make now, whether it’s for breakfast or supper!  And yes I do have a smoothie for supper sometimes… as a stand alone!  Especially when I have had a generous lunch! They are really filling and easier to digest before bedtime.

Ingredients for Apple & Hemp Seed Muffins:

2 1/2 cup whole wheat flour
3/4 cup hemp seeds
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 tsp cinnamon
1/4 tsp cardamom
1 cup unsweetened apple sauce
1/2 cup maple syrup
3/4 cup non dairy milk
1/3 cup raisins

The instructions are so simple:

1) Mix wet
2) Mix dry
3) Add wet to dry and mix well
4) Bake at 350F for about 21-23 minutes

Those muffins are teen approved AND they are so healthy that I am allowing myself one for breakfast along with fruit or a smoothie!  Something I would never do with most muffins because they are usually loaded with fat and sugar! Especially if they are not homemade!

What makes these muffins amazing are:
1) Hemp seeds – for more details you’ll have to check out my blog as this is today’s subject:
2) Whole wheat – no refined flour and it’s filled with vitamins/minerals and fibers!
3) Naturally sweetened with apple sauce, maple syrup and raisins which do not increase your sugar blood level!

Therefore, no worries. Just enjoy them!!!
