Hello my friends!!!

This is me…  I didn’t take any picture of the soup so I went with the next best choice, picture of the cook!
This is me riding my bike!  Which I have been doing quite a lot over the last few days as the weather warmed up in Montreal! This was a little over a week ago on my first bike ride… ever since, we even pulled out the shorts and let go of the jacket!!!
I am vegan for health reasons to start off with, but also for cruelty reasons and environmental reasons!!!  Therefore I do not own a car….. and use public transit or my feet wherever I need to go!  Between May and November (if I’m lucky) I can use my bike instead of public transit… and it is even more ecological!!!  YE!!! Every small step (or turn of a pedal) counts!!!

Today’s recipe is soup…  yes once again… a soup!!!  Because I LOVE soups!!!  They are a meal in a single bowl that you eat with a single utensils, and it is complete!!!  And you can “batch” cook it! How can you get more simple and efficient than that?

Split pea soup (can’t remember where I got that recipe…and I did modify it slightly… so here’s my version!)

Ingredients:

extra virgin olive oil
2 cups yelllow split peas
2 large onions
2 celery stick diced
2-3 carrots diced
1 sweet potato peeled and diced
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon sea salt
8 cups water
kale to taste
spinach to taste

Add the olive oil to a large soup pot over medium heat.  Add cumin and stir constantly for 30 seconds. Add the onions, carrots, sweat potato, paprika and sea salt and cook for 5 minutes stirring often.   Stir in the peas and water.  Bring to a boil. Decrease heat to low and simmer for 50 minutes stirring a few times.  Add the kale and spinach and cook for an extra 10 minutes.

I had this soup with a piece of toasted black bread and it was delicious and so nutritious!!!

Unlike the other recipe I posted here, it did not pass the “kid” test… and I cannot say it is kids approve…. at least not with my son!!!

But give it a try!!  Most of you guys are not kids!  :-)

Did you know that for 100g of yellow split pea, you have 25g of proteins, 26grams of fibers and 31% of your iron for the day?  Combined with the carrots, sweat potatoe, celery, kale and spinach, it is safe to say that this meal is VERY nutritious!!!
