Brown Lentil Curry | Vegan Restaurant Finder


Today’s recipe is both healthy and inexpensive.  OK, I really wanted to say “cheap” but for some reason, “cheap” sounds bad.  Even more so when said by a minimalist – it has a negative connotation!

As you may have seen in my eBook, lentils and chick peas (garbanzo beans) are quite cheap.  Bought at Costco or in bulk, they can be as low as 12-15 cents for 100g!!!  Talk about saving money! On top of that, brown lentils are very nutritious!  Check it out in Minimalist Veganism on Amazon and encourage a fellow vegan by buying it for $2.

Also, today’s recipe is one of those where you throw everything in a pot, put it in the oven at 250F for about 5 hours (depending on your pot and oven) and Voila! A delicious, nutritious meal that took only a few minutes to prepare, cook and it will give your home a wonderful smell!


2 cups lentils

5 cups water

1 can coconut milk

1 diced potato

Spinach to taste

1 onion finely chopped

2 cloves garlic finely chopped

Fresh ginger to taste – either sliced or chopped – I prefer chopped so my son eats it!

2 tbsp. curry or more if you prefer!


I love this meal served on basmati rice with papadums and chutney! It can be a meal in itself for lunches or part of a more elaborate Indian meal.
