Yesterday I was craving coconut and chocolate. Therefore, I tried creating a cake! A chocolate coconut cake!
And guest what? It worked the very first time!!!
It is delicious and crunchy on the outside and soft in the inside.
There might be only one issue…I baked it just about 5 minutes too much, or else it would have been even softer. Oh well, next time!
Here’s the recipe if you want to try this cake out:
Mix 2 cups of whole wheat flour and 2 tsp baking powder – set aside
Mix 3/4 cup of grapeseed oil with 1 1/4 cup sugar. Add 3 tbsp. chia seeds in 12 tbsp. water. Add 3/4 cup almond vanilla milk.
Add to dry mixt.
Mix well and add 3 tbsp. cocoa powder and 5 tbsp. coconut flakes. Mix
Poor in a 8″x8″ greased baking dish and bake about 50 min at 350F
Now this would be delicious served with a raspberries coulis and coconut whip cream!!!
I could also see using coconut milk instead of almond milk in the recipe.
You could maybe add chocolate chips and some vegan icing.
There are many variations, but one thing is sure… you can never go wrong with coconut and chocolate!!!
