If you have ripe bananas the logical next step would be to make banana bread, correct? Not so fast, how about Coconut Banana Ice Cream Vegan style. It is easy to make and you don’t even need an ice cream maker.
Coconut Banana Ice Cream Vegan-Style
4 very ripe bananas (frozen without the skin)
1 can coconut cream (I have found that Trader Joe’s is the least expensive to purchase)
1 tsp. vanilla extract
1 tsp. cinnamon
1 cup sugar
In a food processor blend all the ingredients together until the mixture becomes creamy and without any chunks. Freeze in an air tight container. To serve; I topped the ice-cream withchocolate chips and it was delicious.
An option to try would be to stir in ½ a cup of chocolate chips to the mixture before you freeze it.
