Easy Vegan Banana Bread

I love banana bread!!!  It must be one of the only things made with banana that I really like!!!  I’ve always loved it!!!  And prior to my vegan days (4 months ago), I would always make it…  I tried several recipes over the years…  my mom’s of course….  but it’s an old recipe… with white flour, tons of sugar and loaded with butter and eggs…  it tasted good but for years I did not make it even before I became vegan because of the butter and eggs…  I eventually replaced the butter with vegan butter….  and white refined sugar with cane sugar…  but always kept the eggs.  Then I found a healthier version in a vegetarian cooking book including apple sauce, then another version with zucchini…  this one did not pass the test!!!   The healthier version used less sugar… or at least not white refined sugar!!!  They also included some whole wheat…  they were OK.. but still needed the eggs!!!

Last week I came across a vegan recipe…  NO EGGS!!!  YES!!!  I decided to try it!!  As it turns out, it took me just about 15 minutes to put everything together…. and into the oven!!!  It was the easiet EVER!!!  And it tastes great!!!

Ingredients:

1/3 cup vegan margarine
1/2 cup cane sugar
2 cups all purposed non-bleached flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 mashed bananas
1/2 vanilla almond milk
1/2 cup chopped walnuts or chocolate chips… or maybe a little of both??? (I have only put the chocolate chip as per my son request…)

Preparation:

Prehat oven to 350
Cream vegan maragarine and sugar
Add remaining ingredients one by one while mixing by hand
Pour into baking pan and bake for 50 minutes!  Et VOIla!!!

This is an amazing cake.. and it smelled so good in the house that I did not even have a change to take a picture of if whole!!!  A piece was gone before I knew it!!!  ;-)
I must say that right out of the oven, it is a little “dry”…  but the next morning (it finished baking at 9pm), it was AMAZING!!! Sweet and moist…

I also found out on that same week, that in any baking recipe you have, you can replace every egg with 1tbsp chia seeds and 3tbsp water…  just multiply those proportions by the number of eggs required!!!  Gotta try it in another recipe!!!

My husband suggested I add both the chocolate chips and walnuts!  Which I will try next time…  (already got a request to make another one!)  He also wants me to try raisins to replace the chocolate chip!  Will do too…  in another batch!!!
