Eggplant and Red Lentils | Vegan Restaurant Finder

Hello!

Today’s recipe I tried out last night.  I know it was last minute, but lucky for me it turned out fantastic!!!

I actually had a crazy amount of red lentils at home and an eggplant that I really needed to use!  I hate wasting food!  Therefore I “googled”  eggplant + red lentils + vegan. There was a few options, but some did not qualify being the minimalist I am!  They either required too long in preparation or ingredients that you use once and never know what to do with them after, unless you redo the same recipe! I always find it tricky to buy ingredients I do not use on a regular basis because if I do not like the recipe, I am kind of stuck with what is left of that specific ingredient(s)!

Actually what I cooked turned out pretty nice and even my 13 year old son thought it was amazing!

Not sure what it is called, but let’s call it the eggplant and red lentil recipe!

Ingredients:

1/4 cup barley
1 onion finely chopped
1 medium eggplant pealed and diced
Olive oil
3 tbsp. tomato paste
1 cup dried red lentils
4 cups veggie broth
3 cups cooked chickpeas
1 tsp lemon juice
Cumin
Red pepper flakes
Salt

1) Cook barley

2) In a pot, heat the olive oil and add the onion – cook for 4 minutes or until slightly brown. Then decrease heat and add the eggplant and cook 2-3 more minutes while stirring.  Add tomato paste and lentils and stir to coat with oil. Add the veggie broth and decrease heat to simmer for about 30 minutes (until tender). Take a stick blender and mash in the same pot.  Add salt, cumin and red pepper flakes.  Mix.  Add cooked chickpeas and barley and mix well.  Allow to simmer another 15 minutes.  Add lemon juice.

3) Serve over basmati rice, perhaps with some fresh parsley. Naan bread anyone?

My initial reaction, and that of my husband, was  it seems like it is missing some veggies! Actually the eggplant and onions are veggies, but you just can’t see them! Nonetheless, when having left overs today for lunch I added a side of kale chips from last week.

I could also see this meal served with chopped spinach added during the last few minutes it’s cooking!
