my name is Nathalie and Rebecca asked my to be a guest blogger on her blog…. since I love writing, it did not take me long to say YES!!!
I am a 90% vegan (I only keep my 10% for cheese once in a while, mainly because my son is a picky eater and adding cheese once in a while makes him really happy… but one day I will be a 100% vegan!!!), yogi, environmentalist, minimalist, blogger and published author… In this blog I will write about mostly anything related to those subject which to me are all related anyway!!!
I would like to present you a recipe that is well suited for winter… especially in the north country where getting local vegetables is very difficult this time of year! This recipe is enjoyable for anyone I know who tried it…. even my picky eater of a son!!! It is loaded with good carbohydrates, fibers, proteins and vitamins!!
It does not have a name thus… it is a mix of a few recipes I know and with trial and error it became really good!!!
1 onion – cut to your desire – I like it finely chopped but it’s up to you!
2-3 big carrots diced
1-2 big sweet potato diced
1 cup brown rice
1 cup brown lentils
5 cups water
garam masala to taste
sea salt to taste – or not!
oil or vegan butter
5 cups of water
1. melt the vegan butter and add onion – cook until transparent
2. add diced carrots and sweet potato – cook 3-4 min while mixing
3. add garam masala (and salt if you wish too) and mix well
4. add rice and brown lentils and mix some more to insure garam masala and vegan butter covers everything
5. add water and mix
6. bring to a boil
7. lower heat and allow to simmer (covered) for 40-50 minutes until rice, lentils and vegetables are cooked to your liking
8. remove cover, adjust seasoning, mix and let stand for 5 min-10 min
Serve hot in a bowl and enjoy!!! Remaining portions can be frozen or kept in the fridge to reheat whenever you want to!!!
You could even add vegetable broth and turn this into a soup!!! This is usually what I do with the extras that I have frozen…. thaw it in vegetable broth and eat as a soup!!!
