Hearty White Bean Soup

Hello my friends, at the time you are reading those lines, I am on last full day at my current job…  I am transitioning rather smoothly to another phase of my life… and that’s OK!  Life is a perpetual transition.

This recipe is, once again, with white beans.  I had posted something with white beans a few months ago and then again a few weeks ago,  and I have at least 2 more recipes using white beans I would like to share with you.  I love beans because they are cheap, nutritious and so easy to use once you get the hang of it!
White beans, for a serving of 184g, contains only 53 calories, 3% of good carbohydrates, 8g of protein, 119% of Vitamin C, 3% of Calcium and 8% of iron.  Needless to say, the iron contained in beans is readily assimilated by your body because it comes with Vitamin C, an absolute requirement to be able to absord iron (last I checked, I don’t recall meat containing any Vitamin C – althus it has tons of iron in it, but we hardly can absorb that form or iron!) THAT is amazing… and seeing how little they cost, you should use them more!!!

Today’s recipe is for a soup… very easy to prepare and it can cook for about 7 hours in the oven at 275F.  You can cook it overnight and wake up to a nice smelly house!  Also, it yields so much that you can eat it all week (if you’re the type to do that) or freeze some for later use.


8 cups veggie stock
6 cups soaked white beans
3 cloves garlic
6 carrots diced
6 celery stalk diced
1 medium onion finely chopped
2 bay leaves
2 tbsp olive oil
2 tbsp parsley
salt to taste


Preheat the oven at 275F
Put all ingredients in a dish that goes into the oven
Put into the oven, and forget about it!!!
7-8 hours later you have a wonderful tasty and healthy soup!

I like to serve it with bread, simply as a meal.  No need for anything else really.
