I am on day 40 of my vegan challenge…  almost halfway… and it is not nearly as difficult as I remembered from last year…  I think it is fairly safe right now to officially announce this:

I am vegan!!!

Forever…  not only for 90 days anymore.  I want to be vegan forever and I wanted to annouce it here because of you, all my vegan friends!!! You’re the ones who prompted this challenge,  and you deserve to get the outcome way before anyone else!

I also want to share some disappointment about my weight.  Yes my weight is very important to me, always been and always will be and not for the reason people may think!  It’ not an aesthetic issue,  honestly!!  I am convinced that skinny = healthy.  Now I am not talking about anorexic thin, that is another issue…  but in the lowest of my BMI range skinny.

Now the issue is, when I started this vegan challenge, I started loosing weight.  I am not very big to start of with so I am not expecting miracles, but I have been more skinny in my life and I know that being vegan can do that too (on top of being more radiant, more energized, more peaceful and healthier.)  For myself I can easily loose another 5-6 pounds and still be perfectly healthy!  The thing is, after the initial 2 weeks, my weight started to increase…  and I have no idea why, or should I say I am unsure as to why, but looking into it!

I was told by long time vegans that it may be normal, that it is possible that my body is reacting to change and that with time it will let go.
I also suspect that I am not drinking enough water – so I could be doing water retention.
Another reason may be that I am more hungry at night so I tend to eat more before bedtime – need to find alternative or a solution to that issue.
I will look into all that and try an adjust.
But with time the weight will come off.  I was given a really nice tip by a vegan friend, that I should consider the weight loss as a long term benefit of being vegan instead of focusing on it right now!

On another note, I have been juicing and making smoothies a lot onver the last couple of weeks  and I would like to share with you some of my favorite mixes.

Juice

1) carrots, celery, beets, apple and ginger

2) carrots, celery, spinach, kale, cucumber, yellow bell pepper and apple

3) carrots, celery, spinach, kale, apple and ginger

Smoothies

1) banana, mixed berries, chia seeds and water

2) banana, strawberries, peanut butter and almond milk

3) banana, strawberries and chocolate soy milk

4) banana, blueberries, spinach and almond milk

5) banana, raspberries, chia seeds and water

6) avocado, banana, kale, spinach, cucumber and water

So have fun and try some of these!  You can actually come up with your very own….  there are a few more I would like to try….  so I will do that and get back to you!

I hope you’ll enjoy your smoothie or you homemade juice!!!   They are really beneficial for your health and easy to carry around in a stainless steel mug, but remember they are actually “good” nutritionally only for 48 hours max.  Ideally they are to be drank on the same day but kept in the fridge in a thighly seal container (glass jar or stainless steel mug) away from light they can be good up to 48 hours!
