Oat Muffins | Vegan Restaurant Finder

For a while now I have made muffins and cake and even cookies that are vegan with masked bananas. Yes, I did have a few recipes with no mashed bananas for cakes and cookies, but I had a hard time finding one for muffins!  I was looking for a healthy muffin recipe with not too much sugar, no bananas, was vegan, and didn’t have a dozen of ingredients and steps.  I couldn’t find it. Therefore, I tried to create a vegan recipe from something else I already found!  And guess what it is now vegan and gluten free!

Now be careful because those muffins, as you can see in the picture do not rise.  AND, the mixture is very runny. However, once it’s baked they actually are muffins!

Ingredients:

2 1/2 cup oats (not the quick cooking ones)
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
2 tbsp. vegan margarine
2 cups almond vanilla milk
1 egg equivalent in flax seeds
1/4 cup maple syrup
1/4 cup chopped walnuts
1/4 cup dry raisins

Mix all the dry ingredients including the nuts and raisins
Mix margarine, milk, syrup and “egg”
Combine dry to wet
Distribute evenly
Bake at 375F 25-35 minutes

These are quite healthy muffins. They could even be a good breakfast for the morning when you are in a rush!  You can freeze them or keep them in the fridge.

Enjoy these amazing muffins and do not hesitate to switch the nuts or dried fruit in them.
