Pumpkin Seeds

Hello my friends!!!

It has been a long time since I wrote to you…  I was taking some time off and figuring things out!!!  I had a wonderful 5 weeks off of my day job….  I stayed in Montreal but I really enjoyed myself.  I was walking around, taking bicycle rides, going to Starbucks, trying vegan restaurants, reading, doing yoga…  I took a break from the internet, blogs, facebook, twitter…  but not completely.

I finished those 5 lovely weeks with a book signing in Ottawa…  it was an amazing experience to get to talk about “Life Happens” and meet some readers.

I didn’t cook much so I do not have many new recipies to share but I did try something amazing with pumpkin seeds…. it makes a wonderful snack and I carry it around with me all the time!  Pumpkin seeds are very good for you… loaded with good fats (Omega 3 and 6)  and a good source of zinc, iron, magnesium and good protein…  all with very few calories! And the spices aid in digestion and in increasing metabolism!!!

You coat your pumpkin seeds in olive oil, add chili flakes, cayenne powder, salt and pepper… all this to taste.
Put in the oven that has been preheated to 350F for about 15 minutes…
and Voila!  A healthy…  nutritious snack that is easy to carry around!!

love and peace,
