Quinoa Salad | Vegan Restaurant Finder

Hello!

Last week I was talking about kids parties!  What if you are invited to a BBQ or some other festivity and you are asked to bring something over? Of course plain old salad is good, BUT most likely other people will already have thought in mind. If it’s a non-vegan event, your salad may be the only thing you have to eat (aside from plain bread and veggies without the dip)!  Therefore, it needs to be complete and filling!

This is a salad I love to make…and everyone likes it!

Ingredients:

-Cooked and cooled quinoa
-Diced celery
-Diced cucumber
-Bell pepper (any color, here I used yellow, orange and red)
-Black olives
-Olive oil
-Freshly squeezed lemon juice
-Dry parsley – could also be fresh
-Pepper
-Salt

Now, toss everything!

At the time of serving, you can add one or more of the following:

-Hemp seeds
-Sunflower seeds
-Chopped walnuts
-Chickpeas
-White navy beans
-Avocado slices or cubed

I also like to serve this salad on green leaves, it makes for a nice plate! And the last minute ingredients can be tossed on top of the rest.  This creates a nice visual effect!

In the above picture you have the bulk of it because I made a big batch to eat between now and moving day!  Nothing fancy and no serving artifice!
