As I told you last week, I am trying to eat more vegetables; in variety, quantity was already there! I am also trying to eat them in different ways than what I know from my childhood…. I have a new found passion for oven roasted vegetables… this week is cauliflower! This vegetable is often left aside because it is white and we tend to think it is not as healthy, but this is wrong! Cauliflower is part of the cruciferous vegetable family just like broccoli, kale and cabbage. It is not colored because it is covered by it’s leaf while growing, so it is kept away from the sun. Nonetheless, cauliflower is VERY nutritious and has properties we’re all looking for! It boosts your immune system… 3 raw florets provide 67% of you vitamin C for the day (that is more than some citrus) and 9% of your folate for the day! And we ALL need a strong immune system to help prevent heart disease, cancer and so much more!
Speaking of heart disease, cauliflower lowers your bad cholesterol (LDL) especially because it is high in dietary fibers (which helps in cholesterol elimination by binding to it and removing it from your body) but also because it is high in folate, which also helps prevent heart diseases! Now about the big C, the one we’re most afraid of. Cauliflower could also help prevent cancer by boosting your immune system, like I mentioned before, but also because it is high in phytonutrients that help prevent cancer by preventing enzymes to activate cancer-causing agents and activating enzymes that clean toxins and carcinogens from our system!
All that said… who wants a side of cauliflower?
I know I do, but the only way I used to eat it was steamed and then put into the oven with cheese. I am now pretty sure the cheese undoes the good the cauliflower does, so there’s no point (even vegan cheese). I try to stay away from too much processed food as much as possible!
So I had to find another way to have it…. And I did!
Cut the cauliflower into small-to-medium sized florets – put in a bowl
Drizzle with olive oil
Add chili powder
Add tumeric powder
Add salt to taste
Put in preheated oven at 425F for about 25 min
Take out an enjoy!!!!
It is so amazing that even my son who hates cauliflower with a passion said that it was alright like that! He would eat more than one piece but he actually ate and swallowed it!
You can also prepare it the same way, cut in small-to-medium florets, add olive oil and salt only. Bake in the oven the same way and when it comes out, serve with a miso-tahini dressing and sprinkle with sesame seeds! It is just as delicious, but not spicy!
Also try baking the cauliflower in the oven the same way with olive oil and salt and add nutritional yeast for a cheese like taste!
So there you are… 3 new ways to prepare cauliflower, and enjoy it!
