Summer Eating

I must admit:  I do not cook or bake a lot during summer….  I eat quite differently, simpler, for many different reasons.  First of all, because I do not have air conditioning, I refuse too, I love to have my windows open and enjoy the eat…  hence I do not want to warm up my home even more!  Second of all, because, surprise surprise,  cooking takes time… even when you’re organized… and I prefer spending an extra 30 minutes outside than in the kitchen!  And last but not least, because all the food is so fresh….  fruits and vegetables are so yummy…. who needs to “cook” them?

So typically, a summer meal at my place looks like what is in the picture…  This was a “brunch” over last weekend… it consisted of fresh bread from the bakery, a salad made of chickpeas, sweet peas, tomatoes, olives and homemade dressing (you already have the recipe for the dressing!), and some raspberries and strawberries… and do not forget the soaked almonds!!!  It was yummy.

Of course, the choice will differ from one meal to another depending on what is in the fridge…  for example, the salad was a left over of chick peas and vegetables that were in the fridge.

I can easily put on the table some guacamole, salsa, corn chips, vegetables and homemade dip for a Mexican taste.

Or some nori sheets, cucumber, avocado, left over rice, ginger, spouts and soy sauce for an Asian taste.

I toss in all the vegetables I have to make a huge salad, to which I add some sunflower and sesame seeds with bread.

I try to always have some vegetables, fruits and nuts and/or seeds.

I can also go with a smoothie and bread or cereals.

Or a juice (homemade of course) with bread and hummus.

I find that these will keep me full and energize me for a while…  perhaps because your digestive system is slowed down by the heat, or because everything is so fresh and nutritious!  Or maybe a little of both!  But I do find that I eat much less in the summer.
