Sweet Pita Chips- A Break and A Big Eye Opener

Hello lovely readers!

As you may already know, I have MS (I even wrote a book about it that is available on Amazon!).  It’s pretty much under control since I have became vegetarian and then vegan and since I took up meditation and yoga! I have been medication free since that time and no physical symptoms until I took up running a few weeks ago!  I live a very “clean” lifestyle. I pay attention to everything that enters my mouth and that I put on my skin. I must admit that all of the product I use on my skin is not necessarily 100% vegan because these are more expensive.  A friend of mine just made me realize, or reminded me of what I knew but pretended not to know. My skin is THE largest organ on my body and THE organ that absorbs most of the chemical and toxic product that enters my body!!!  On that note, I decided to look into vegan products for my “beauty routine.” It is honestly quite simple. All I need is shampoo, body wash and body/face hydrating lotion. I am going to try organic, vegan, and gluten free products for my body. My friends knows exactly where to find these.  Unfortunately, before I mention the name, I want to try it out because I cannot advertise something I did not try out because  that would go against my own values!  So in a week or two, I’ll get back to you on that.

About needing a break, my MS has been acting up a little and my Ayurveda practitioner has helped me figure out why. I need to recenter. I need to stop putting so much pressure on myself and I need to stop running because it is not good for me! Therefore, running a marathon is now out.  I will maybe delay one or two projects I had in mind until the end of this month to the end of March or April. My health must be my #1 priority! I also need to get back to my regular mediation practice, so I need to find a time that is convenient every day. I also need to come out with a daily schedule that I will have to respect every day no matter what. What makes me angry is that I knew all that. Being vegan, I assumed everything would be okay. Please do not make the same mistake. It helps a lot with most things, but it does not FIX EVERYTHING!!!

Here’s a simple recipe for you to try out.  This recipe is perfect for left over pita bread, which I most of the time turn into a salty snack. This time I felt like something sweet and I had nothing prepared so I came up with this.

Cut your pita bread into a triangle.  Open and separate.  Spread vegan margarine on each triangle and sprinkle with sugar and cinnamon.  Put in the oven at 350F for 15 minutes and VOILA! You can enjoy these hot or cooled down.  The cooler they are the crispier they get.  It’s an amazingly cheap and easy to make snack!!!
