I think I have found the perfect vegan alfredo sauce! It is creamy just like the “real” thing, but with no animal crap! I have found this recipe on the internet when I looked up a vegan alfredo sauce. For this one I had all the ingredients needed and it seemed simple enough! But there were many more options.
2 cloves garlic minced
2 tsp. whole wheat flour
3/4 cup plain soy milk
oregano (to taste)
salt and pepper (to taste)
pinch of nutmeg
2 tbsp. nutritional yeast
Heat oil and add garlic. Cook for a few minutes, but don’t let it turn brown. Add flour and mix well with oil and garlic. Slowly add the soy milk while mixing – make sure no clumps are forming. Add oregano, salt, pepper and nutmeg and mix well. Remove from heat. While mixing, add the nutritional yeast.
It is that simple and it was just delicious!
I actually cheated and did mine using a whole cup of Belsoy instead of 3/4 cup of soy milk – it was even creamier! I also added fake bacon bits in order to get a carbonara sauce!
My husband, who prior to turning vegan almost a year ago, was ordering pasta with alfredo sauce everywhere we went, actually like this one. Should I add that he never liked any “real” alfredo sauce I made before we turned vegan. Can you imagine how happy I was???
