Vegan Brownies To Die For

OK this week’s recipe may very well beat anything I wrote before…  if you like desert once in a while.  It has been qualified with many many nice words…  by a few vegans and non-vegans alike and everyone who tried it loved it and asked for more… so you may need to make 2 recipes if you intend to share…. or just do not share!!!  Who said sharing is good anyway??? ;-)

Of course, even thus it is vegan, I would not recommend having this stuff over and over again because it is sugar… non-refined organic vegan sugar, but still sugar!  If you do not “burn” the sugar you injest (by doing exercises), it gets stored by your body as…….drum roll……. FAT!  In the exact places we do not like to have it!!!  Biochemistry 101!

Also, I have to mention that my son who’s 12 and a brownie expert has brownies everywhere you go, this is one of the only desserts he likes aside from melted chocolate with fruits… LOVES  them and he’s not shy to say when he doesn’t like somethign I make.  He even said they were the BEST he ever had!!!

So with no further delay (after all some people I know have been waiting for this ever since Saturday night when I’ve put the picture on facebook) here’s the recipe…

It is inspired by The Joy of Vegan Baking, but as always modified slightly!  I seem to be unable to actually follow a recipe!!!

Ingredients:

1 1/2 cup cane sugar
3/4 cup unsweetened applesauce
2 tbsp water
2tsp ground flax seeds
1/2 cup water
2tsp pure vanilla extract
1 1/2 cup unbleached all purpose flour
2/3 cup cocoa powder
3/4 tsp baking powder
1/4 tsp salt
1 cup semi sweet vegan chocolate chips
1 cup chopped walnuts

Directions:

Preheat oven to 350 degrees F and grease an 8×8 baking pan – I use vegan butter to do so

Whisk together cane sugar, applesauce and 2tbsp water

In a small bowl, using a fork, combine ground flax seeds and 1/2 cup water

Add flax seed mixture to wet ingredients along with vanilla extract and mix

In a separate mixing bowl, whisk together flour, cocoa powder, baking powder and salt

Add the chocolate chips and walnuts to the dry ingredient and then mix in the wet ingredients

Pour vegan brownie batter into the baking dish and bake for 40 minutes – do not use the famous toothpick trick because of the nature of the mixture, it may never came out clean before the brownies are completely burned!!! And quite frankly, they are so good still moist in the middle!!!  YUMMY!!!
