Hello lovely readers!!!

I will now be writing to you on Wednesdays instead of Tuesdays, as my schedule is getting busier.  I needed to work on a more proper scheduling of my time and energy and this blog post was best if written on Wednesday.  I will also be switching it up every now and then… of course, there will be LOTS of recipes still, but I will add posts about the health benefits of being vegan, and some environmental aspect.  I am aiming to have 2-3 recipes posts per month and 1-2 posts of another subject about veganism.  Hope this is OK with you guys!

Unfortunately, I can’t remember where I have seen the recipe I am sharing with you today.  It was so easy that I just took it quickly on a piece of paper.  I am sorry about that, but because I tend to add, remove and/or switch ingredients, it is not a “copy/paste” per say.

Vegan Mac and Cheez:


cooked cut pasta of your choice reserved

1 cup of organic unsweetened soy milk (I rarely use soy milk, but this time I gave it a try because I was afraid of the consistency of the sauce using a less thick milk)
2/3 cup all purpose unbleached flour
1 1/2 tbsp vegan margarine
1 1/2 tsp onion powder
1 1/2 tsp dry mustard
salt and pepper to taste
nutritional yeast to taste

Put all the sauce ingredients (except for salt and pepper) in a pan and mix constantly while warming up and thickening.
Once thickened to desire consistency, add salt and pepper.

Put the cooked pasta in an oven dish and pour sauce on top, mix, sprinkle nutritional yeast on top and put in oven at 350F for about 25 minutes.  Put on broil for an extra 5-10 minutes or so if you want it to be crispy!  Serve hot with vegetables on the side.

I personally think the sauce was too thick and next time for sure I would add more liquid to it but that is my personnal opinion.
I think finely chopped onion, garlic, celery and carrots would be fun to add to the sauce after they have been softened first.  Therefore, I would add that to my pan, softened with the vegan margarine then add the remaining ingredients.  Then, thicken my sauce and pour over the pasta, and finally sprinkle nutritional yeast to put in oven.
