Vegan Muffins- Any Way! | Vegan Restaurant Finder BlogHello!!!

Sorry I missed you guys last week but I didn’t have internet connection… and I was settling down in a new city!

This week, I want to share with you an amazingly easy one bowl muffin recipe! I already made a few batches with different flavors and it always turns out great!

The basic recipe is:

1 1/2 cup whole wheat flour
3/4 cup cane sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 tbsp. chia seeds in 5 tbsp. water
1/2 cup vanilla almond milk
1 cup of… (any of these)
- blueberries (frozen works well)
- cranberries
- chocolate chip
- raisins
- nuts
or a mix of any of these!  I also want to try raspberries. And dried apricot!

In one bowl, mix all ingredients.  Add vegetable oil, chia seeds mix and almond milk. Mix well. Add the remaining ingredient (blueberries, cranberries, raisins, chocolate chip or nuts) and mix well.
Pour into muffin tins and bake at 400F for 15-18 minutes, depending on your oven.

And “voila”! In about 10 min prep and 15 min baking, you have delicious, nutritious homemade muffins!  You can even make more than one batch one the same day! It needs a little synchronicity but it works!  In  a few hours, you can have all your muffins made for a while, as you can also freeze them individually and take out of the freezer on a need-be basis!

It doesn’t get any simpler than that! Enjoy!
