Vegan Rice Krispie Treats

I am on day 19th of being vegan!!!  It is going well…  actually much better than I expected!!! The first week was really hard… but when I changed my perspective on it, not looking so much as to all I was missing, but rather looking at what I have to gain from it… it became much easier!!!
I am also talking about it to places I visit a lot like Starbucks for example….  I mentioned it to the regional director… and I went on their web site (they have a place for suggestion or comments) to suggest they include vegan treats!!!  And voted for all similar suggestions!!!  One of them is up to more than 40,000 points and is one of the most popular suggestion!!!  I was thrilled about that!!! I am inviting you to go vote on!!!

Asking around on how to deal with going out as a vegan to a non vegan restaurant, some people suggested that I eat home all the time… makes it easier to control what I eat… and other people mentioned that if us, vegan, never ask for the food we want in restaurant and other places, we’ll most likely never get it!!! After thinking about both suggestions I chose the latter (but I still eat much more at home than I used too)!  I talk about it and ask for vegan option whenever I can…

Also talking to this lovely girl I know that has been vegan for 6 years she mentionned to  me that Oreos and Fudge-O are “accidentally” vegan… they were not meant to be that way but they have no animal product!  I guess I will be going to the grocery store tonight!

In the mean time, when I go to Starbucks, I bring with me my own snack!  A vegan rice krispie treat! (but now I can also bring Oreos)

The recipe is inspired by Alicia Silverstone’s “The Kind Diet”.  The only thing I changed is using regular rice krispies instead of brown rice krisps… only because I did not find any…

1 box or rice krispies
1 1/2 cup of brown rice syrup
fine sea salt
3/4 cup unsalted unsweetened peanut butter
1/2 cup (or more) of vegan chocolate chip

1) Melt the brown rice syrup stirring it under medium heat.
2) Once it becomes transparent, add the peanut butter and a pinch of sea salt.
3) Mix.
4) Once everything is disolved, pour over the rice kripies and mix well.
5) Once it is close to room temperature, add in the chocolate chip and mix.
6) Transfer to a square mold (9″x9″).
7) Allow to cool at least an hour before cutting into squares or bars.

You can also replace the peanut butter with almond butter… and the chocolate chip with raisins… or use both!  Why not?
