I always had a difficult time with brussels sprouts and avoided them like a plague! lol
However, as I became vegan I am trying really hard to include more greens in my diet! And more unusual (to me at least) veggies!
I was always big on fruits and veggies with a definite tendency for the sweeter ones! Nothing wrong with that because they are loaded with vitamins, but I might be missing out on something! I want to add diversity!
One of the vegetables on my “To conquer” list is brussels sprouts. I tried a few recipes, but nothing too fantastic until I found this one! This is amazing! It actually was my lunch on Tuesday because I could not stop eating it!
1. Slice the brussels sprouts
2. Toss with olive oil, balsamic vinegar, salt and pepper to taste.
3. Roast in the oven at 350F for about 15 minutes
4. Allow to cool a little – you want it warm, but not burning hot!
5. Put it in a bowl with dried cranberries and chopped walnuts!
It makes for an amazing salad! It also can be eaten then or taken to work and eaten at room temperature!
Adding some finely chopped garlic before the roasting would be a great addition too! The garlic would become very soft and delicious and add a “je ne ne sais quoi” to the dish!
Just writing about it makes me want to run to the grocery store to get more brussels sprouts!
I will of course try other recipes and let you know how they turn out too!
