Wonderful Avocado!

There’s a lot going on in my life right now…. and being vegan and minimalist is wonderful in helping me deal with all that!  I do not complicate my life with food… I already have enough to think about and figure out!  I realized that cooking vegan can be quite simple…  and delicious!  With a few ingredients you can prepare healthy complete meals in no time! I have found a new “addiction” to avocado….  it is so simple to use, and one of nature’s perfect food!!!

It is loaded with:

Healthy fats (great source of omega- 3&6)
Zero cholesterol (as cholesterol only comes from animal product)
Full of vitamins (A,C,D,E,K, and B vitamins)
Potassium, Magnesium, Copper, Iron, Calcium
Anti-oxidants (such as lutein which is good for your eyes)
All the essential amino acids
2% protein (usable protein because it’s not cooked)
Alkalinizing food

And it is so easy to use…

Here’s what I do with it:

1) Smoothies: avocado, spinach, kale, cucumber, apple and coconut water : Yummy green smoothies!!!  Even kids love it because the avocado and the apple “hide” the taste of spinach and kale – and the color is just amazing!!!

2) Include in nori rolls – over the weekend when I want to finish left over vegetables, I do nori rolls – learned it from Alicia Silverstone.  I roll into a nori sheet some brown rice, left over cut up vegetables, and avocado….  use a little soy sauce and eat as it!!!  Wonderful, nutritious, and easy to make….  AND gets you to use left over cucumber, celery, bell pepper, carrots, and green leaves so you are not wasting food! And everyone can choose their favorite vegetables!!!

3) Include in Mexican meals – as guacamole or simply sliced into burritos for example!  I make my burritos using using brown rice, black beans warmed up in “cheese” sauce (made with nutritional yeast) and cover bell peppers, salsa and avocado slices…  and some olives!  YUMMY!!!  Even my non-vegan brother love those burritos!

4) Or…. I mash up some avocado, add finely chopped celery and garlic… juice of 1/2 a lemon, herbs and a dash of salt and eat it as a spread on toast topped with sliced green olives on toasted rye bread in the above picture.  It is also good on black bread with a side of vegetable or as is.

I also sometimes add 1/2 an avocado to my meals when I am having left over and there is not much to share between my husband and I… for example with left over pastas with tomato sauce (add some protein) or to complement my mexican rice.

I can also have avocado with crakers as a snack…

I also heard of a few dessert made with avocado…  like cakes or puddings….  but did not try it yet!!!

I just LOVE avocado… it is nutritious, easy to use and taste amazing! What else can you ask for?
